Aroma: Peat with a touch of seawind. Situated on the shores of Loch Indaal lies the village of Bowmore. Known as the 'capital' of the island, Bowmore is home to one of the great malt distilleries. It is thought that development of the distillery began just as the village itself began to take shape, in 1768. Bowmore was one of the first legal distilleries on the island. The establishment of Bowmore was a natural development, in line with the industrial evolution of the village. Built during a time of common grain shortages, the output of Bowmore initially reflected this influence. Whilst development of the distillery was not anticipated to be of immediate benefit to the islanders, after two centuries of continuous production, the vision of the Campbells has certainly been realised. |

Edradour is the smallest whisky
distillery in Scotland, nestled in a pocket glen in the hills above
Pitlochry; possibly the smallest legal distillery of any kind in the
World. At a weekly output of a mere 600 gallons - enough to fill twelve casks - what Edradour makes in a year, a typical Speyside distillery would produce in a week. Only the finest spirit is laid down by John into hand-selected oak casks for the ten year long wait before it can take the name of Edradour. During the aging process the whisky is regularly monitored with the same hand care and attention that it took to produce it. It is a small wonder, then, that Edradour can be a little hard to track down, making Edradour single malt a rare pleasure for a fortunate few. This started life as two
completely separate whiskies.
Following a few days spent on Islay in 1995, Jon has always been a big fan of Peaty whiskies and was very keen for Robbo to create a new whisky in this distinctive style. At the same time, Mark had asked for a Smokey style whisky, similar to Highland Park or Talisker. So Robbo created two amazing whiskies that spurred a heated debate as to which was better. The discussion continued well into the night at a hotel outside Bristol, culminating in a moment of genius... someone (can't remember who) mixed the two whiskies in the same glass. It tasted amazing, distinctive yet smooth, Smokey and Peaty at the same time: The Smokey Peaty One was born. |

by Justerini & Brooks. A Single
Malt Speyside Highland. A somewhat sharp initial attack but the taste
makes up for it. They print the distillation and bottling dates,
which is very considerate, more distilleries should do
this.
This distillery is tucked away behind trees in a dip on the river Isla near Keith. It was originally built as a meal mill in 1823, converted into a distillery in 1891 and acquired by Gilbey's the gin distilers in 1895. It produces about 52,000 alcohol-litres/week, all destined for blends. It is a neat and clean distillery, employing stainless-steel mashing and fermenting vessels. It buys in ts malt from various sources including Buckie and Pencaitland. There are six washbacks and two pairs of stills. The spirit stills are equipped with 'purifiers' which reflux the heavier fusel oils etc. back into the distillation while allowing the lighter vapours on into the main condenser. |

legitimately claims to be one of the
oldest distilleries in Scotland. Distilling on the site is thought to date from as early as 1742. In the late 1700s it is believed that there were up to ten illicit stills operating in the district. But by the 1830s only two distilleries remained in the bay. In 1837 these distilleries amalgamated to form Lagavulin. At this stage the distillery was under the ownership of the Graham brothers and James Logan Mackie, uncle of Sir Peter Mackie who later became one of the 'big five' in the whisky industry. |

100% floor malting through to bottling on the same site. Campbeltown is

capita. It must be that the citizens, having consumed Scotland's
bestdram, feel the need
to give thanks to the Almighty. 1967 Springbank. Deep golden color. Its nose is vanilla and the salty sea side. The palate is full and rich with many layers of flavor which develop as you drink.
